At flow rates of 16 CFH or less, the stone produces very fine bubbles and high CO₂ transfer.

Ceramic is not resistant to sudden impact. Dropping the stone will damage it. The stone and carrier are round and will roll off a table, so never leave them unattended on a flat surface. Ideally, store the WizzStone-Combo in its own sanitiser bucket.

Assembly

The hairpin cotter pin holds the assembly together. It must be fitted every time the WizzStone-Combo is assembled.

Wear gloves whenever you handle the ceramic stone.

Insert the stone into the fixed end

Keeping the stone level with the carrier, slide it into the fixed end cap. Do not lever the stone up and down. It should bottom out against the fixed end cap, with a gentle twist if needed. When it is fully home, the O-rings are no longer visible.

Keep the stone level with the carrier as you slide it in. Don't lever it up and down.

Slide the loose end cap onto the square section of the carrier, then gently slide it onto the other end of the stone. Do not force it.

Fit the cotter pin

Insert the hairpin cotter pin through the loose end cap to lock the assembly together. Check that it is in place.

If the stone or end cap is tight:

  • Apply a very small amount of the supplied lubricant (about a quarter of a pea) to the O-rings.
  • Try rotating the stone in the carrier and fitting it again.

About a quarter of a pea of lubricant is enough.

Pinched O-rings: an O-ring may pinch or get slightly cut during assembly. Because it is a double O-ring seal, minor damage should not cause a leak. Make a note and replace the damaged O-ring before the next use. Spares are supplied.

Cleaning

The ceramic stone must be cleaned after every use. Its thick wall and small pore size make it very prone to clogging. BrewWizz offers two cleaning methods.

Torpedo method

The torpedo method uses a tri-clamp housing that lets cleaner be forced through the ceramic stone.

Recommended cycle:

  1. Caustic cleaner such as PBW
  2. Caustic cleaner such as PBW (second pass)
  3. Rinse
  4. Sanitiser, or store the stone in a sanitiser bucket after cleaning

Ultrasonic method

Ultrasonic cleaning gives the best results for keeping ceramic stones clean.

Recommended cycle:

  1. 20 to 30 minutes in caustic cleaner such as PBW
  2. 20 to 30 minutes in clean water
  3. Store in sanitiser

Setting the CO₂ flow rate

Use the CO₂ flow rate calculator in the BrewWizz app to find the right flow rate for the stone.

Open the calculator

In the BrewWizz app, go to Calculation and select CO₂ Stone flow rate calculator.

Enter the stone details

Set Carbonation stone length to 16 and Stone porosity to Best (0.5 to 0.2 micron).

Enter the product details

Enter the height of product over the stone in inches and the approximate finish gravity of the beverage.

Set the flow controller

The app shows a Recommended flow rate in CFH MAX. Set the flow controller on the side of the FizzWizz to this value. The WizzStone-Combo supports flow rates up to 16 CFH.
